SPRING SPINACH
It’s the first day of Spring and that means it’s a good excuse to get some local spring spinach for yourself and your family. We are extra stocked with Hollister Family Farm’s spinach so we thought why not take the opportunity to highlight a wonderful family farm on the Seacoast of NH while also sharing some ways to enjoy this dark, leafy green. Spinach has many benefits beneficial for skin, hair, and bone health. Local spinach, freshly picked and packed, also means it’s more nutrient dense—the benefits are tremendous.
INGREDIENTS
2 bags of spinach
4 strips of bacon
1 onion, sliced thinly
1-2 cloves of garlic, minced
LET’S GET COOKIN’
Cook the bacon in a skillet.
Remove and drain on a paper towel. Set aside.
Drain bacon fat leaving about 2 tbsp in skillet. (Save fat for cooking another time!)
Saute onion and garlic until onion is translucent.
Break up cooked bacon and sprinkle into skillet. Add spinach. Cook until just wilted, less than 5 minutes.
Stir well. Serve with your favorite meal. Enjoy!
SPINACH ISN’T JUST FOR SALAD

Add to soups in the last 5 minutes of cooking
Chop and add to pilaf or risotto
Add to scrambled eggs
Great addition to a frittata or quiche
Mix with Ricotta for stuffed shells or lasagna
Saute for a pizza topping
Part of a stuffing for chicken breasts
Add to any casserole
Top our Mac & cheese with spinach
Add chopped to ground beef for a great burger or meatloaf
